Ingredients

  • 2 lbs 2 lbs chicken drumsticks
  • 2 tbsp peanut butter
  • 2 tbsp chopped cilantro
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 tsp Sriracha
  • 1 tbsp coconut oil
  • 2 tbsp lime juice
  • 2 cl garlic, minced
  • 2 tsp finely chopped jalapeño
  • Garnish with Chopped roasted peanuts, cilantro, jalapeño

Instructions
 

  • Firstly, keep all the ingredients ready, Marinate the chicken drumsticks with garlic, cilantro, sriracha, honey, peanut butter, jalapeno and coconut oil along with lemon juice and soy sauce.
  • Allow it to rest for 60 minutes in a zip lock bag. Store it in the refrigerator. This will make sure flavors are absorbed well. Keep some marinade as reserve.
  • Pre-heat the grill to medium high heat and grill the chicken covered. It will take about 6-8 minutes for each side to cook or until the chicken is no longer pink. Once done, place it on a platter and cover with foil to maintain the temperature.Make sure the leftover marinade is boiled well so that it is safe to consume.
  • Baste the grilled chicken with the leftover marinade.Garnish with cilantro sliced jalapeno or chopped roasted peanuts if you desire.
