Acid: Acid is used to tenderize the chicken pieces and for that you can use lemon juice or vinegar

Fat: Avocado oil or olive oil is ideally used to keep the meat moist and to add some flavor to the dish. Fat is a scary word, but here it improves the flavor.

Salt: Salt when mixed with liquid acts as a brine, which makes the meat moist and flavorful.

Seasoning: For seasoning you need some really good spices

Sweetener: Sweet flavor is brought about by using honey and brown sugar. This ensures the meat is soft, tender and moist. Sweet also adds flavor to the dish. You can even skip this ingredient if you don’t like the sweet flavor in the marinade.

To compensate you can add in more spices and herbs to enhance the flavor. Be creative with flavors so that you enjoy your meal every time.

Before we begin with the chicken marinade recipe in detail, let us get some doubts cleared.

How much chicken marinade will be needed for 1 lb. chicken?

How to freeze the chicken marinades?

The raw chicken along with the marinades can be frozen for up to 90 days if stored in a proper freezer bag. Before cooking the meat, defrost the chicken in the fridge for 24 hours and then bake or barbecue according to your preference.

Steps on how to make chicken marinades

  1. To make each marinade simply combine the ingredients in a bowl until they are mixed well.
  2. Combine the marinade with the chicken and transfer it into a freezer bag and seal.
  3. Once packed, place them in the freezer according to the above instructions on storage and use as and when required.

Cooking instructions

Baking: For baking in the oven, first you need to preheat the oven to 400-degree F. Place the chicken in a casserole dish or a baking sheet. Now, bake for about 20-25 minutes until it is done.

Slow Cooker: In a slow cooker cooking, you have to place the chicken and the marinade together and cook on LOW for 3 to 3 ½ hours and your chicken marinade is ready. Any more cooking time will dry out the dish and not taste as intended.

Instant Pot: Place the marinade, chicken and 1/3 cup chicken broth in a 6-quart instant pot. If you are using an eight-quart instant pot, then you need to add an additional ½ cup of broth. Lock and seal the lid. Cook at high pressure for 7 minutes. When the time is up using the quick release feature get rid of the pressure. It will take 10-15 minutes for the pressure to build up and for the cooking time to start.

Grill: Cut the chicken to about 3/4 inch thick or even cut into half lengthwise for even and fast cooking. Preheat the grill to medium high and grill each side for about 4-5 minutes on each side. The time can vary depending on the thickness. Cook until done.

How to know if the chicken is done?

A digital meat thermometer is required to check the internal temperature of the meat. When the internal temperature of the chicken touches 165-degree F, then you can be sure that the chicken is done.

Safety tips to follow

  • Marinating meat is a simple process, but make sure there is no cross-contamination from raw meat.
  • Meat should be refrigerated well during the marination process. Raw meat should be stored in the lowest shelf so that there are no accidental drips and to prevent any food contamination.
  • Never use the leftover marinade unless you are cooking chicken with it. It is not safe to consume as it was mixed with raw chicken.

Now that you know how to cook chicken marinade 4 ways, tryout all the different marinades as mentioned below so that you are not bored of one flavor.

You can use other chicken cuts for this recipe, but the above cooking instructions is specific for chicken breasts.

honey garlic chicken marinade
  • Chicken breasts or thighs: Two large boneless and skinless breasts. Combining breasts and thigh cuts will result in a juicy meal
  • Honey: Since this recipe involves heating honey the benefits of honey are lost in the process. I would still prefer to use raw honey for its health benefits
  • Soy Sauce: Soy sauce is a perfect Savoury marinade
  • Apple Cider Vinegar: Used as a tenderizer and to add some zing to the meal
  • Fresh garlic: Combine grated as well as minced garlic for that extra flavor and texture. Two grated garlic will make the sauce flavorful and a minced garlic clove increases the texture
  • Green onion and sesame seeds: These little garnishes give an extra zing and crunch to the grilled chicken. Even though this recipe may not be exactly Asian, but there is no harm in adding ingredients that improve the flavor
  • Lemon: Fresh juice of one lemon

Preparing the marinades

Marination plays an important role in this recipe. You need to marinade the chicken for at least 20 minutes before you start cooking. The longer the marination time the better will be the flavors and taste. Overnight marination would be nice. Marinade the chicken and put it in the refrigerator and use after a day or two for better results.

Steps to make grilled honey garlic chicken

  • Preparing the marinade: Take a small bowl and whisk honey, garlic, lemon and soy sauce. Keep aside quarter cup sauce for basting
  • Mix it to the chicken: Mix the sauce to the chicken in a bowl and allow it to marinate for thirty minutes to an hour in a resealable bag
  • Grill: Pre-heat the grill to medium heat and grill for 6-8 minutes on one side or until it is no longer pink. Baste the chicken with the remaining sauce during the last five minutes
  • Garnish: Garnish with green onion

Grains: Grilled chicken goes well with quinoa, brown or white rice and whole wheat spaghetti

Sweet and Spicy Mango Lime Chicken

With a sweet and spicy flavor, our Grilled Sweet and Spicy Mango Lime Chicken are not only scrumptious but also good for health. You can bake or grill this chicken recipe. Put a tropical twist on your next barbecue with these chicken thighs.

There are lots of ways to customize this recipe and it is super simple to make. Take a look!

Grilled or baked chicken – Grilled chicken tastes great, but if you don’t feel like barbecuing, you can bake it instead. For either method, I have included the instructions below.

Bowls or plates  – You can serve the chicken over rice, with salad, or with rice. Easily prepare a meal in this manner so that you can take it in a lunchbox. It’s perfectly fine to plate the meal.

Variable spice levels  – this dish has a spicy and sweet taste to it thanks to the spices I use. It’s not too hot – I would call it spicy. For a hotter dish, use hotter chilies or chili paste.

Everything here except the chicken goes into the marinade, which is so easy to make.

Boneless skinless chicken thighs – You can also purchase boneless skinless chicken breasts.

Diced mango – Keep some extra mangoes for serving along with the bowls. Also, pineapple is a delicious alternative to mango if that’s not your favorite!

Also, fresh mango may be hard to find at particular times of the year. If needed, canned mangos (in their natural juice) may be used.

Chili sauce – any hot sauce you like; Sriracha is my favorite sauce.

Lime juice – You will get more nutrients from fresh juice than from juice concentrates.

Salt and black pepper

Minced garlic

Olive oil or any oil with a neutral taste. You can substitute avocado oil for olive oil.

Toppings for garnish – Cilantro, lime wedges, crushed black pepper and sea salt

How to make Sweet and Spicy Mango Lime Chicken

Simply combine the ingredients in a blender or food processor and you will have your marinade ready to use in minutes!

Prep the ingredients. Make sure the pit is removed and the mango is peeled.  Make sure the chicken breasts are completely dry, then place them in a glass baking dish or a large Ziploc bag.

Prepare the marinade for the chicken. Combine all the marinade ingredients in a blender or food processor and blend until smooth. This should be a lovely tropical yellow color. Add the chicken and the marinade to a large Ziploc bag.

The chicken should be marinated in the refrigerator. If you wish to marinate the chicken in advance, you can marinate it for up to 24 hours if you like. Otherwise, one hour is enough.

You should grill at medium-high heat if you plan to grill. Place the marinaded Chicken on the grill.

Let it cook for about 20 minutes, until it reaches 165 F on the inside. On the inside, it should not look pink. Don’t be afraid to grill additional lime slices!

In a baking dish, arrange the chicken and pour over the leftover mango chile chicken marinade. Place the recipe in the oven and bake it for 25 – 30 minutes at 425 degrees. After 25 minutes, check for doneness.

The last minute of cooking time is when I broil the chicken to caramelize the marinade.
